La Confrérie de la Chaîne des Rôtisseurs is the oldest international gastronomic society in the world. The Bailliage of the Greater Palm Beaches is its local chapter, gathering members and guests across our season.

La Chaîne des Rôtisseurs

La Confrérie de la Chaîne des Rôtisseurs is an international gastronomic society founded in Paris in 1950, based on the traditions and practices of the old French royal guild of goose roasters whose origins reach back to the year 1248.

Revived in 1950 by a small group of Parisian gourmets, the modern Chaîne brings together professional and non-professional members who appreciate fine cuisine, wine, and the gentle art of dining well together.

A worldwide table

Today the society numbers tens of thousands of members in more than 80 countries. In the United States there are nearly 130 bailliages, each a local chapter that hosts dinners, tastings, and educational events throughout the year.

International headquarters remain in Paris, and the Chaîne is represented by members on every continent.

Greater Palm Beaches

The Bailliage of the Greater Palm Beaches.

Our bailliage gathers members and guests throughout greater Palm Beach County, from Boca Raton, Delray Beach, and Lake Worth to West Palm Beach and Jupiter at restaurants of distinction, private clubs, and occasional special venues.

Each evening is shaped in close partnership among the chef, sommelier, and our Chaîne leadership. Menus are developed in advance. Wines are chosen to complement, not compete. Members are introduced; toasts are made; the night unfolds without rush.

L'Ordre Mondial

The order within the order.

L'Ordre Mondial des Gourmets Dégustateurs is a sister society of the Chaîne, founded for members with a special interest in wines, spirits, and the rituals of tasting.

Members of L'Ordre Mondial gather for vintner dinners, comparative tastings, and educational evenings led by sommeliers and producers. Greater Palm Beaches members in good standing of the Chaîne may join L'Ordre Mondial, a separate enrollment with its own traditions and pleasures.

The Royal Guild

King Louis IX charters the Ayeurs, the goose roasters' guild of Paris, with the right to roast all manner of fowl and game.

The Revival

In post-war Paris, a small group of gastronomes revives the old guild as a modern international society, the Chaîne des Rôtisseurs.

More than 80 countries, tens of thousands of members, and a single shared purpose: to celebrate the pleasures of the table together.
